Mini Banana Pikelets

Try this simple recipe for a delicious breakfast treat this weekend.



Pikelet Mixture

1 egg

1 banana

½ cup brown sugar

¾ cup milk

½ teaspoon vanilla bean paste

1 ¼ cups wholemeal self-raising flour

1 teaspoon butter


To Serve

You could top your pikelets with lots of different toppings such as –

Banana & Strawberries

Nutella & Ice Cream

Lemon & Sugar

Honey & Yoghurt



Break the egg into a small bowl and whisk with a fork.

In a separate bowl mash the banana and then add the sugar, egg, milk and vanilla bean paste.

Stir through the flour and then allow the mixture to sit for a few minutes, this allows the flour to absorb some of the milk and thicken the mixture slightly.

Heat a frying pan over medium heat, add some of the butter to the pan and let melt softly,  in batches add ¼ cupful’s of the pikelet mixture to the pan, cooking for about 1 ½ minutes or until bubbles appear on the uncooked surface, then turn the pikelets over and cook the other side for a further 2 minutes.

Once all the pikelets are cooked, grab the toppings of your choice and enjoy!
