Yummy Bliss Balls

These delicious bliss balls are perfect for a little snack for morning or afternoon tea or any time of the day really!

Or why not give them as a little gift in a mason jar wrapped with some ribbon and a gift tag.

 

Lemon Cheesecake & Coconut Bliss Balls

 

Ingredients

250 grams full fat cream cheese, softened and roughly chopped

Zest and juice of 1 medium lemon

2 tablespoons honey

2 cups desiccated coconut, plus an extra for rolling

Optional

150grams dark chocolate, melted

 

Method

Into a food processor place the lemon juice & zest, honey and cream cheese and blend on medium speed until well combined. Add the coconut and blitz again until well combined.

Using a teaspoon, spoon out some of the mixture and then using your hands roll into balls, (at this stage just get the mixture to stick together, you can shape them later) once all are rolled place into the fridge for 45 minutes.

Take the bliss balls out of the fridge and roll them in the extra coconut. Or for something a bit more decadent dip them into the melted chocolate and add a sprinkling of coconut on top, then place into the fridge until ready for serving.

 

 

Coconut & Honey Bliss Balls

 

Ingredients

1 ½ cups desiccated coconut, plus extra for coating

2 tablespoons honey

½ teaspoon vanilla bean paste

1 tablespoon coconut oil

pinch of salt

Optional –

 150g dark chocolate, melted

 

Method

Place all of the ingredients into your food processor and blitz at medium speed until the mixture is well combined.

Using a teaspoon, spoon out some of the mixture and then using your hands roll into balls, once all are rolled place into the fridge for 1 hour.
